American Heart Association New Guidelines for 2010
AHA will publish their Guidelines 2010 on October 18, 2010. We will be sending you a summary of all the changes shortly thereafter. This summary will also, be posted on our website.

September Heart Healthy Recipes
Fall is here with cooler nights and gorgeous colors. Food and family time go together in this season. So let’s look at making some healthy plant based choices that will help us stay healthy so we can enjoy this beautiful season.

Vegetable Risotto
3 ½ cups vegetable broth (Trader Joe’s has a great version in a box!)
1 cup Arborio rice
½ cup water
1 onion finely chopped
2 cups broccoli florets
1 cup chopped zucchini
1 cup frozen corn kernels
1 cup finely chopped red bell pepper
1 cup finely chopped green bell pepper
Fresh ground black pepper to taste
Place the broth in a saucepan and bring to a boil. Stir in the rice, reduce heat, and cook over low heat, stirring frequently until the broth is absorbed, about 15 minutes.
Meanwhile, place the water in a large nonstick frying pan. Add all the vegetables, except the basil. Cook, stirring occasionally, for 10 minutes. Remove from heat.
Combine the rice and vegetables. Stir in the basil. Season with the pepper.
Apple Squares
1 cup whole wheat flour
¼ cup turbinado sugar
¼ cup honey
1 tsp. baking powder
½ tsp. cinnamon
¼ tsp. nutmeg
1/3 cup water
1/2 cup apple sauce
1 tsp. vanilla
2 Tablespoons Ener-G Egg substitute (find near the cornstarch and flour at most good grocery stores)
½ cup raisins
½ cup non-fat granola
3 cups canned apple slices
1/3 cup turbinado sugar
1 tsp. cinnamon
Preheat oven to 350 degrees. Lightly spray a 9x13 inch baking dish with nonfat cooking spray. In a large bowl, combine flour, baking powder, cinnamon, nutmeg, and Ener-G egg substitute; mix well. In a separate bowl combine apple sauce, vanilla, both sugars, and blend until smooth. Add applesauce mixture to flour mixture with water and stir until well blended. Spread batter into prepared pan. Sprinkle apples, raisins, and granola over batter. In a small bowl, combine 1/3 cup turbinado sugar with 1 tsp. cinnamon. Sprinkle mixture over apples. Bake 30 to 40 minutes, or until edges are light brown and apples are tender. Serves 16.
